Create The Wet Mixture
A quick note on butter: We like to use unsalted butter for baking recipes then add pink Himalayan salt when needed. Salted butter can potentially make your cookie recipe a tad too salty.
Begin by melting the butter on the stove or in the microwave. Now combine the vanilla, egg, and melted butter to a mixing bowl. Whisk the wet ingredients until they are all smooth and well combined.
Pro Tip! Be careful when adding a raw egg to melted butter. If the butter is too hot, it will cook the egg and that will ruin the cookie dough. To avoid cooking the egg, allow the butter to cool off for a few minutes BEFORE combining.
Can I Eat Cookies On The Keto Diet
Um, YES! Of course you can! As long as they are keto approved keto, then you can certainly enjoy keto cookies if they fit into your daily macros/calories profile. For Strict Paleo Chocolate Chip Cookies:
- Swap the butter: You can swap out the grass-fed butter for ghee, or if youre looking for a dairy-free gluten-free sugar-free chocolate chip cookies recipe, you can sub coconut oil. Grass-fed butter will give you the most familiar cookie texture, but you have options!
- Leave out the xantham gum: Its not strictly paleo. However, if you can tolerate it, I highly recommend leaving it in to keep these chewy!
- Swap the sweetener: Low carb sweeteners are a gray area for the paleo diet, but you could use coconut sugar if you dont need them to be sugar-free and are strict paleo.
What Is The Secret Ingredient

After speaking to our friend Deana, the founder of Good Dees baking mixes, we learned beef gelatin powder is her secret keto baking ingredient. Beef or pork gelatin powder gives cookies and other keto baked goods a chewy texture, and you can easily find it at your local grocery store or online.
Plus gelatin is gluten free and sugar free so no keto concerns there. Most keto cookie recipes do not use gelatin, but we think its definitely necessary to make the best keto chocolate chip cookies.

What’s The Difference Between Coconut Flour And Regular Flour
For starters, I strongly believe coconut flour is far better for your health than regular baking flour. Regular white flour is mostly just quick-burning starch . Whereas coconut flour is high in fiber and protein.
Take a look at the nutritional difference between the two. White flour is listed first.
- Net Carbohydrates : 92 grams white flour vs 24 grams
- Fat: 1 gram vs 16 grams
- Protein: 13 grams vs 16 grams
Can you see why eating baked goods with white flour over many years can easily lead to weight gain? And not only can white flour lead to weight gain, it can lead to inflammatory diseases. Although the protein is almost the same, in white flour, it’s mostly all gluten.
Another great thing about baking with coconut flour instead of regular flour or even almond flour is that you use much less of it. That’s because coconut flour is similar to a sponge and expands as it soaks up liquid.
Why Do Macro Tracking Apps Show More Carbs Than This Recipe Shows
Some people might be freaking out because of the number of carbs in this recipe once they plug it into myfitnesspal or cronometer. The net carbs are indeed accurate on this recipe and Ill show you why those measurements seem inaccurate. Net carbs are calculated by removing both fibre and sugar alcohols. Fibre and sugar alcohols have no effect on insulin or blood glucose levels, so you will be fine to eat these cookies on the ketogenic diet.
The total carbs for this recipe are 19 g, fibre is 2.7 g, and the sugar alcohol content is 14 g. This means that 2.3 g of net carbs is absolutely correct .

Recommended Sugar Free Chocolate Chips
The two chocolate chip brands I recommend for baking keto cookies are:
- ChocZero Sweetened with monkfruit, ChocZero chocolate chips contain no sugar alcohols or artificial sweeteners. They are 50% chocolate so they are perfect for baking chocolate chip cookies with. They are my preferred sugar free chocolate when making a chocolate chip cookie.
- Lilys Chocolate These chocolate chips are sweetened with erythritol and stevia.
Another option if you dont have access to sugar free chocolate chips, is to use a 90% dark chocolate or a bakers chocolate. This chocolate will be bitter but it will do the job if you are really wanting to make a fresh batch of keto chocolate chip cookies.
Almond Vs Coconut Flour
There are two main flours normally used in a keto recipe, coconut or almond. For the original easy to make keto cookie recipe we used almond flour. We just found it to give the most similar texture to normal cookies, while still keeping flavor in this recipe traditional.
If you are nut free or just prefer coconut flour we do have a version below for nut free keto cookies. While that recipe requires a few more ingredients, its equally as good. Both flours are keto and gluten free so they will make a delicious recipe either way!

How To Make Low Carb Chocolate Chip Cookies
Make the cookie dough: Start by whisking together the cashew butter, sweetener, baking soda, eggs, and vanilla extract, until just combined. Fold through the chocolate chips.
Chill the dough: Cover the bowl and refrigerate for 30 minutes.
Shape and bake: Now, form 12 balls of cookie dough and place them on a lined baking sheet, and bake or 10-12 minutes. Remove the cookies from the oven and let them cool completely.
Making The Cookie Dough
At this point, you’re ready to get your dry ingredients back out and add them to the bowl. That said, you’ll want to add & mix them in 2 batches – adding & mixing half of the dry ingredients at a time.
Then, when everything is mixed up and a cookie dough forms, you’ll want to chill the cookie dough in the refrigerator for 30 minutes before baking the cookies.
If you skip this step, your cookies will spread out way too much in the oven, and you won’t achieve that perfect cookie size and texture – so make sure to chill your cookie dough for the best results.
Oh, and by the way, I recommend using two separate baking sheets for these cookies. The recipe makes 12-15 cookies, which is just way too many for one normal-sized baking sheet. If they’re overcrowded on the pan, they’ll bake into one another, and that’s something you’ll want to avoid.

Fat Bombs Keto Bombs Or Fat Fudge
Theyre actually just three different names for the same thing. You definitely dont need to be on a low carb or ketogenic diet to enjoy them, and Im not endorsing or advocating for any particular diet in this post.

How To Make The Best Keto Chocolate Chip Cookies
First, you add your almond flour, egg, cream, butter, vanilla extract and granulated sweetener into a bowl.
You can use coconut oil if you want a dairy free keto dessert!
To my UK readers – if you use ground almonds, add an extra couple of tablespoons as ground almonds tend to be coarser than almond flour.
You can mix everything with a fork in a large bowl – it comes together really easily. Let the batter sit for a few minutes to let the flour absorb the moisture.
Now, chop your chocolate. Any chocolate with a cocoa solids content of 85% and above is fine. I like using 90% Lindt.
Another alternative is using sugar-free chocolate chips. Lily’s stevia sweetened dark chocolate chips, Lakanto or Choczero are popular in the US.

Fold the chopped chocolate into the cookie batter. Now’s a good moment for a little taste – adjust your sweetener if you wish
Roll the batter into little cookie dough balls and place on a baking sheet. The dough will still be a tad soft and sticky.
TIP: Use baking/parchment paper to prevent the cookies from sticking. I had run out, so I greased the tray with butter.
Flatten your low carb chocolate chip cookies with your hand. They should be about ½ centimetres thick. Then bake in the oven for around 13 minutes.

If you can manage to keep your fingers out of the cookie jar, this keto cookie recipe will last up to 5 days at room temperature in an air-tight container.

How To Make Keto Chocolate Chip Cookies
There are a few tips to making these keto choc chip cookies super perfect. First, make sure you mix all the dry ingredients before adding to the butter mixture. This will help evenly disburse the xanthan gum and baking powder throughout the batter.
Tip: You need to melt the butter. If you dont like melting the butter in the microwave, you can also do it in a saucepan. You want your cookies to melt in the oven. Melted butter helps this process, as well as using 100% erythritol.
Your cookie batter should look like the photo above before you proceed. If the cookies dont melt into cookie shapes in the oven within the first 5 minutes, it either means that youve added too much flour or youve not melted the butter. If they dont melt, though, you can easily press them down with fork midway through cooking.
