White Sugar Substitute I used powdered Allulose as it dissolves really well. However, I am pretty sure that any sugar substitute should work in this recipe

Egg This helps to bind the ingredients as well as helps them to rise. Make sure that your egg is at room temperature otherwise it could cause the butter to solidify.

Vanilla You might be a little shocked by how much vanilla is added to the bars but it is necessary. Blondies are literally the vanilla version of a brownie so you want a fairly strong vanilla taste

Almond Flour and Coconut Flour Using a combination of both these flours helps to keep these bars nice and dense. If you dont have coconut flour, you can replace it with more almond flour but you will need to double the amount to ½ cup instead of the ¼ cup called for in the recipe.

Salt The main function of salt in any recipe is to enhance the flavour of the other ingredients. Its presence perks up the depth and complexity of other flavours as the ingredients meld.

Cream butter and sugar. Beat the butter and monk fruit sweetener until well combined.

Add blueberries. Add the blueberries and beat them on high until the blueberries are fully incorporated.

Combine dry ingredients. Beat in the dry flour mixture.

Add the chocolate. Stir in the white chocolate chips.

Where To Find Keto White Chocolate Chips

In case you havent seen this new development, its a brand called Bake Believe and they are only available at Walmart in store. This is tough for me because I have no Walmarts very close to me and I like to shop locally as much as possible.

But I decided it was important to get my hands on some and test them out for keto baking purposes. So I traipsed all over Portland and Vancouver, Washington, looking for the damn things.

The first two stores I went to didnt have them at all. The third had a space for them but none on the shelves. Fortunately, one kind employee looked in the back and found 6 bags. I bought all 6 of them.

Then she told me another nearby store carried them as well. Nearby turned out to be another 10 miles and after putting in so much effort, I decided to stock up. I bought another 10 bags. Plus I bought some of the semi-sweet and dark chocolate chips as well.

Because I am crazy like that. And because I thought it would also be fun to do a giveaway for the chocolate chips, since I know full well they arent that easy to get your hands on. .

Lily’s: This was the first company that started to sell keto chocolate and I used to buy them all the time, but they don’t ship internationally anymore so I’ve been using Choc Zero ever since.

Homemade: You could also attempt making some homemade chips. Here is a white chocolate chip recipe from my friend Zuzana that you could try.

Are Keto Cookies Good For You

It all depends on the ingredients used, but keto cookies can be quite good for you. Of course, you’ll want to make sure they are made with wholesome ingredients, like using almond flour instead of regular flour and erythritol or monk fruit sugar instead of regular sugar. So if they are low in carbs and sugar and high in fiber and healthy fats, that’s how you know it is a good keto cookie.

How To Nail These Flipped Cookies

SO these are very similar to my absolutely loaded keto chocolate chip cookies, but also sort of like my keto sugar cookies because they use Greek Yogurt to keep them soft. Heres how to make sure they turn out just how you like them!

  • Beat the wet ingredients with a hand mixer and make sure your butter is soft. You dont have to go crazy creaming butter and sugar forever, just make sure everything is combined and smooth.
  • Whisk the dry ingredients really well. NO LUMPS! You want all of the flours to be evenly distributed.
  • Combine the wet and dry and REALLY work that mixture, turning and folding, to make sure the moisture is absorbed evenly.
  • Roll & Chillllll because its easier than chilling the whole bowl! Its messier but my preferred method. Just roll all the dough and line them up on a tray and refrigerate them until they are chilled through. Then arrange them on your baking tray and go in batches! *or freeze and bake whenever*
  • Shaping them depends on how you like your cookies. Fat and puffy or thin and slightly crisp? *keep reading*

    Keto White Chocolate Chip Cookies [with Toasted Coconut]

    Flour: For this recipe, I used 3/4 Cup Almond Flour and 2 tbsp Coconut Flour.

    Dry Ingredients: ½ tsp. Baking Powder, 1/8 tsp. Salt, ¼ tsp xanthan gum, and1/3 Cup Lakanto Classic Monk Fruit Sweetener.

    Blueberries: An essential and tasty ingredient. I used 1/2 Cup Frozen Blueberries for my cookies.

    Butter: 1/3 Cup Butter. An important note here: Make sure your butter is soft before baking with it.
