Ok, so, enough chit-chat. Let me walk you through how to make keto tortillas.

These almond flour tortillas are grain free, gluten free, and sugar free, and they’re the perfect keto vessel for all of your favorite Mexican recipes.

Personally, I love to use them to make these low carb tacos – gah, just thinking about those tacos is getting me hungry.

I’m telling you, when you pair these low carb tortillas with my homemade keto taco seasoning you’ve got almost everything you need to make some tasty low carb tacos. So definitely give them a shot!

With that said, these almond flour tortillas also pair incredibly well with my keto stir fry as well.

But I even use them for fajitas, quesadillas, and even to make keto tortilla chips with too!

Not to mention, they’re especially good to use when you order something keto from chipotle.

The Process

Once you’ve got your ingredients out, just add them all to your food processor, and process until a ball of dough forms. By the way, this is only going to take 15 seconds – if that – to happen.

Now you’ll want to cover that ball of dough with plastic wrap, knead it for just a minute or two with your hands, and then let it rest for about 15 minutes.

The kneading and resting process will just help activate the xanthan gum, and give the tortillas they’re fantastic bendability.

Once the dough is done resting, you can unwrap it, and split it up into 4 equal-sized smaller balls of dough. And a food scale can really help you here.

If you follow me for a while, you might already know, that I am against buying already pre-shredded cheese, as those are usually covered with some type of starch and therefore adding on the carbohydrates, we are trying to avoid.

Always, always get a whole block of cheese. It will take you only a few extra minutes to shred your cheese at home, but therefore you get a pure fresh cheese every time you use it in our lifestyle.

Type of cheese also matters.

Store bought pre shredded cheese gives you more of a Tostada consistency, but if you shred it at home, those tortillas are much more pliable.

In this keto recipe I havent gone down the road of making a fancy kind of keto bread or flour alternative to tortillas. To make the shells I use just 1 ingredient: cheddar cheese.

Then, using simple kitchen utensils, you can shape them into a traditional taco shell shape.

In fact, I didnt have to purchase anything for this recipe as I used my homemade Taco Seasoning too.

Once you add the meat and your choice of toppings, I can assure you that just a couple of these will fill you right up and satiate you.

These taco shells are made of cheese. As simple as it sounds, that is it. No other ingredients needed and you still enjoy your tacos. If you follow these instructions and make cheese shells crispy, you wont miss the regular taco shells.

What is amazing to me is, my kids even like these taco shells. They are so good.

How To Make Keto Taco Cups

Preheat the oven to 375° F.

Place a sheet of parchment paper on a baking tray. You could also use a silicon mat. Ive found that putting the cheese directly on the baking sheet leads to it sticking.

Form 8 piles with the shredded cheese. If youre baking sheet isnt big, you might have to do this in two parts. You want to give enough room for the cheese to spread out to about 3 around.

Bake for 5-6 minutes, until the edges of the cheese start to brown. The top will bubble up, but you dont want the center of the cheese to brown then youve gone too far.

Remove the tray from the oven and let it cool for a few minutes until its cool enough to handle the cheese.

Carefully peel each cheese round off the parchment paper and mold it to the inside of a muffin tin. You can place it inside the muffin tin or over the cups on the back of the tin. Either way works. Over the back side makes them a little less crumpled, so you might find that easier.

Allow the cheese to cool completely before you take it out of the cups. You can put it in the refrigerator for a few minutes to speed up the process.

In a medium pan, cook the ground beef on medium high heat until browned, breaking up the meat as it cooks. Add the chili powder, paprika, salt and pepper. Stir to incorporate it all. You can add a tablespoon of water to help disperse the spices, if necessary. Give it a taste and adjust the seasoning accordingly.
