How To Make These Keto Peanut Butter Chocolate Chip Cookies:
Allow your eggs to come to room temperature by removing them from the fridge an hour before preparing the cookie dough. Preheat your oven to 375°F, and line baking sheets with parchment. Melt your butter in the microwave, then set aside to cool.
Once your butter has cooled, combine sweetener and unsalted butter. Cream together for 10 minutes until light and fluffy
Add in the peanut butter and vanilla extract, beat until well combined. Then, add in your eggs one at a time, mixing as little as possible, until just combined.
In a separate bowl, combine your dry ingredients and mix well making sure there are no clumps.
Now, just fold in the dry ingredients to the wet until just combined. We worked so hard to get air into the batter when creaming the sweetener and butter, so we don’t want to over-mix.
Add in your chopped peanut butter cups, and chocolate chips. You can reserve pieces of the peanut butter cups to press onto the top, or just fold them all in at once. Just gently fold to combine.
Using a spoon or cookie scoop and a scale, measure out 24 cookies that weigh between 40-50 grams each. You could skip the scale of course, but we like to measure.
Add them to a parchment lined baking sheet, leaving enough room in between so they can spread. Bake for 12-15 minutes, watching them carefully so they don’t burn! These go fast, we cook them at a higher temperature to get the best texture, but this also leaves less room for error.
How To Make A Keto Skillet Cookie:
This recipe follows a very similar process to most cookie doughs . Start by always combining your dry ingredients and whisk together until combined.
Take your softened butter and no sugar added peanut butter and whisk that together in a separate bowl. Then beat in the eggs, one at a time.
Fold the peanut butter mixture into your dry ingredients. It will start to look like wet sand, then become a thicker cookie dough base.
Finally add in your chocolate chips and reserve a small amount to push directly into the top to make the cookie skillet look pretty and presentable.
Bake the cookie off in the oven until set, about 25 minutes or so. Let it cool a bit before digging in .
How To Store Almond Flour Peanut Butter Chocolate Chip Cookies
If the chocolate peanut butter keto cookies are not all eaten immediately, they can be kept in the refrigerator in an airtight container for up to about a week. They can also be stored on the counter in an airtight container however, they will last longer in the refrigerator.
The cookies can also be frozen to get one out at a time when you need. Sometimes I do this to portion control and only allow myself one at a time as a treat. They can be kept frozen for a month or so, and I dont like to go longer than two.
To thaw the cookies, simply set one out on the counter for 20 minutes, or in the refrigerator overnight to thaw. If youre in a huge hurry, microwave the cookie for 15 seconds at a time.

Can I Use Another Kind Of Nut Butter

Yes, you can substitute almond butter, cashew butter or sunflower butter in this recipe. Just note some other nut butters tend to be runnier than peanut butter, so it may result in thinner cookies. Be sure to stir the nut butter up very good before using to make sure you incorporate all of the oil properly. You could try chilling the dough before scooping to prevent the dough from thinning if your peanut butter is on the runny side.

Peanut Butter Cookie Ingredients

The flour:
I used almond flour for these, which is not actually flour at all its simply ground-up almonds that have been blended into a fine texture resembling flour.
If you prefer to use pecan flour, sunflower flour, or cashew flour, I think these would be fine but havent tried, so be sure to report back if you do experiment. Please also report back if you try subbing coconut flour I think this could work as well, but youd need much less flour , because coconut flour absorbs liquid like a sponge.
The nut butter:
Ive made both peanut butter and almond butter cookies from the cookie recipe, or you can use sunflower butter, pecan butter, cashew butter, macadamia nut butter, or this Keto Nut Butter for a low carb option.
The sweetener:
For sugar free cookies, either powdered erythritol or a powdered monk fruit erythritol blend will both work well here.
If you dont need the cookies to be suitable for a low carb or ketogenic diet, regular powdered sugar is also fine to use.
Stevia, maple syrup, allulose, and granulated sweeteners havent been tested in this recipe yet, so be sure to leave a comment if you experiment.

Instead of using 1 large egg, you can use ground chia seed. Unlike many vegan recipes, you dont need to prepare it as an egg substitute , but just add it into the cookie dough as it is. Start by using 3 tablespoons, and if the dough is too thin, add one more, for a total of 4 tablespoons .

Make The Cookie Dough
- A) Mix Up the Dough – In a large bowl, beat together the butter, oil, Sukrin Gold, and granular erythritol until creamy. Next, beat in the egg and vanilla extract for 1 minute. In a seperate bowl, mix together the almond flour, xanthan gum, baking soda, and salt. Slowly add the dry ingredients into the wet ingredients and beat until just combined. Gently stir in the chocolate chips.
- B) Form the Cookies – Using a small cookie dough scoop, arrange tablespoon-sized balls onto parchment-lined baking sheets, spacing them at least 2 inches apart. You can also just use your hands to roll one tablespoon of dough at a time into a ball.
- C) Use Multiple Baking Sheets – This recipe makes 40 cookies. We used two half baking sheets that fit 12 cookies on each one . We baked those cookies and then baked a second batch with the remaining dough. Just store the dough in the fridge while you are baking your first batch.
- D) Add the Peanut Butter – In a small bowl, heat the peanut butter and granular erythritol in the microwave for 30 seconds and stir to combine. Use a spoon to scoop out 1 teaspoon of dough from the top of each cookie ball and fill it with 1 teaspoon of the peanut butter mixture. Place the scooped out cookie dough back on top of the peanut butter mixture.
How To Make Protein Cookies

- Mix dry ingredients. Stir protein powder, sweetener, and salt together in a large mixing bowl.
- Add wet ingredients. Whisk egg in the side of the bowl to incorporate yolk and white before mixing fully with dry ingredients. Stir in peanut butter and vanilla, until smooth.
- Add chocolate chips. Fold into the dough until incorporated.
- Scoop. Using a cookie scoop, take tablespoonfuls of dough, pressing into the scoop, and release onto a parchment paper lined pan. Press dough down with the palm of your hand or the bottom of a wet glass until flattened to 1/4 inch.
TIP: You can sprinkle more chocolate chips on top if you like. This isnt necessary, but makes the finished cookies look prettier. Just press them gently into the dough.
- Bake. Keto protein powder cookies are ready when semi-firm and not sticky on top. Cool completely on the pan, or transfer to a cooling rack after the first 10-15 minutes of cooling.

How To Make Keto Peanut Butter Cookies
Making gluten-free peanut butter cookies couldnt be simpler! Here are the basic steps:
First youll want to preheat your oven to 325 degrees F. While that is warming up, combine all cookie ingredients in a mixing bowl. I find that it is easier for the dough to form if you save the chocolate chips for last.
Using a 1-inch cookie scoop, form the cookies and place on a cookie sheet lined with a silicone baking mat. These are the best at making sure your cookies cook evenly and dont stick to the pan. If you dont have one, at least make sure your cookie sheet is greased to try to prevent that issue.
Bake cookies 10-12 minutes for soft, chewy cookies. If you prefer crunchier cookies , cook up to 15 minutes.
