Low carb cookies are just like any other chocolate chip cookie recipe, but instead of using wheat flour, they are made with almond flour. Regular sugar is substituted with erythritol, which is a keto friendly sweetener. I recommend using 100% erythritol which you can find in the recipe ingredients. Do not use liquid stevia or liquid monkfruit in this recipe.

No Coconut Flour Or Cream Cheese In This Recipe

This recipe does not include coconut flour like other recipes because I think it gives keto cookie dough a weird taste and texture. Especially the texture. Its just better without it!

I do think coconut flour is great in keto baked good though!

As far as cream cheese goes, I wanted this recipe to also have a dairy-free option, so I decided against using cream cheese altogether. In general, cream cheese is not an ingredient I use in most of my cooking as I tend to prefer a more clean-eating approach.

How To Make Keto Cookie Dough With Coconut Flour

This recipe is definitely best with almond flour, but if you prefer coconut flour or want to make this recipe nut-free then try this. Remove the almond flour and add in 1 tablespoon of coconut flour. Once that is mixed in, slowly add small amounts of coconut flour until the dough is able to be formed into balls.

You should need 2-3 tablespoons of coconut flour in place of the almond flour.

Storing And Freezing Low Carb Cookie Dough

  • To store: Keto cookie dough should be kept in a sealed container and stored in the fridge. It will keep well for up to 2 weeks.

How To Make Giant Chewy Keto Chocolate Chip Cookies:

Add the butter and sugar to a stand mixer and beat until combined and fluffy .

Use a rubber spatula to scrape the sides of the bowl and beat in the egg and vanilla extract.

Scrape the sides of the bowl again and add the remaining dry ingredients except for the chocolate chips. Beat on high speed until everything is incorporated and a sticky dough forms. Beat in the chocolate chips.

Use the rubber spatula to scrape the sides and bottom of the bowl again to ensure all of the ingredients are mixed together very well. Refrigerate the dough for at least 1 hour before baking.

When youre ready to bake, preheat the oven to 350 degrees F and line a large cookie sheet with parchment paper.

Measure out cup of the dough and place it on the baking sheet. You can also use a cookie scoop if you own one. Repeat for remaining cookie dough . Note that the dough will spread during the baking process so be sure to leave ample room between balls of dough.

Bake for 11 to 15 minutes, or until the cookies reach your preferred level of done-ness. Chewy cookies will need 10 to 11 minutes on the dot and crispier cookies will require 13 to 15.

Remove cookies from the oven and allow them to cool for a few minutes before transferring them to a wire rack and digging in! If you go after them right away, they will fall apart easily, so for best results, wait for at least 15 minutes before diving in.

    I first came across a variation of this recipe in a cookbook that my cousin lent me. In it were some amazing keto recipes that still influence my cooking to this very day. In one section of the book, there were a handful of keto desserts that caught my eye and of course, the edible cookie dough was one of them.

    The original recipe is now significantly different from this one because Ive been tweaking and making my own adjustments along the way. So this version is very much inspired by that old cookbook, but with plenty of my own unique twists to it.

    The first is the use of unsalted butter. Many cookie dough recipes call for salted butter but using unsalted butter adds a certain level of creaminess to your cookie dough. Next is the use of blanched almond flour, which basically means almond flour without the almond skins mixed into it. The almond skins added specks of brown in the cookie dough which I wasnt a huge fan of. Blanched almonds are pretty much just one color. Lastly, this recipe calls for dark chocolate chips. Not milk, not a mix of dark and milk just dark chocolate.

    First youll cream the butter and sweetener together. Then youll add vanilla extract and almond flour. Finally, youll fold in the chocolate chips and voilayoure done! Its crazy simple, really.
