How To Make Keto Taco Casserole
Start by browning the ground beef with the green peppers, onions, and garlic in a large skillet. Be sure to break up the ground beef with a fork as it cooks.
Once the beef is no longer pink, drain the excess oil out of the beef mixture using a strainer or colander. Add the beef mixture back to the pan, and sprinkle in the taco seasoning. Mix everything together so that the beef is evenly coated.
Next, transfer the beef mixture to a casserole dish and spread it out evenly.
In a small bowl, add the eggs and half of the shredded cheese. Stir the egg mixture until the eggs are lightly beaten, and then pour it evenly over the ground beef mixture.
Mix the casserole a bit to ensure that the cheese gets in between the meat. The egg acts as a binder for the casserole. Don’t worry, you won’t even taste it.
Top the casserole with the remaining cheese, and bake uncovered for 25 minutes, or until the cheese is melted and bubbly.

When cooking ground beef, for this Mexican ground beef casserole, I sprinkle a little baking soda over the raw beef before cooking and let it sit for 15 minutes.
This helps tenderize the ground beef, making it cook more evenly and quicker.
The general rule is to add 1/4 teaspoon per pound of beef and its why I added 1/2 teaspoon to the recipe.
This is totally optional, just note that it will take a little longer to cook the ground beef if you omit it.

Making this dish is just a few easy steps. Heres how to make a Mexican casserole thats full of flavor and low on carbs:
- Cook cauliflower rice. In a skillet, cook cauliflower rice with avocado oil and sea salt. Find full instructions for making cauliflower rice here.
- Add diced tomatoes with green chilies. Drain the can first, then stir into the rice. Transfer the mixture to the bottom of a 9×13 casserole dish.
- Cook bell peppers and onions. Wipe out the skillet, heat more oil, and saute bell peppers and onions, until soft and starting to brown. Season with salt and pepper.
And arrange over the casserole dish:
- Add sour cream. Spread it over the vegetables and smooth with a spatula.
- Cook ground beef. Add the ground beef to the pan and increase heat to medium-high. Break apart with spatula, until browned. Add the water and taco seasoning. Bring to a boil, then simmer until it thickens.

- Top with cheese. I used a Mexican blend, but cheddar works, too!
- Bake. Since all the layers are already cooked, this goes quickly just until casserole is hot and cheese is melted.

Making this gluten-free taco casserole is pretty straightforward. Youll cook the frozen cauliflower rice according to the package instructions.
If frozen cauliflower rice is not an option for you, you can make our recipe for cilantro lime keto cauliflower rice
Then, in a large bowl, combine the cooked cauliflower rice with the lime juice and the chopped cilantro. Spread the cilantro lime cauliflower rice evenly onto a greased 9×13 greased baking dish.
Next, over medium-high heat in a large skillet, brown the ground beef. Break up the meat and sprinkle with the baking soda and seasonings.
Note that if you opt to tenderize the ground beef with baking soda it will need to sit for about 15 minutes before cooking the meat.
Cook the meat until brown, being sure to break it into pieces with a spatula until cooked. Set the ground beef aside in a large bowl and cook the chopped onion and bell peppers in the same skillet you browned the meat.
Set your oven to 350 degrees and continue to assemble your taco casserole by adding the seasoned taco meat on top of the cauliflower rice being sure to distribute the taco meat evenly.
Then its time to prepare the cheesy salsa sauce. In a small pot mix together until fully combined the tomato sauce, diced can of tomatoes with green chilies, heavy cream or the sour cream thinned with heavy cream, and spices.
Then just sprinkle the remaining half cup of shredded cheese on top of the casserole.

- Ground beef: I use ground chuck, but you can use any kind of ground beef you like
- Zucchini: I love how zucchini holds its texture in this casserole and that it doesnt overpower the cheesy goodness of this recipe
- Seasonings: Salt, Black pepper, Garlic powder, Onion powder, Italian seasoning
- Cream cheese: I find that full fat cream cheese makes it creamier than reduced fat cream cheese
- Shredded cheese: I used cheddar cheese and mozzarella cheese, but you can use any kind you have on hand
