Pickles are one of my favourite condiments. I LOVE all sorts of pickles and these keto bread and butter pickles are really easy to make. I love to put them on cheese and crackers or on top of hot dogs and burgers. We like to have a jar of these in the fridge, so we always have some on hand. We even served these for lunch when family came to visit and my brother loved them and asked for the recipe.

This Bread and Butter Pickles recipe is one that I love with all of my heart.

When I was little , Id sometimes hang out at my Dads house in the summers while he he went off to work. Lunchtime would roll around and Id open his refrigerator to see what sorts of things a Dad keeps in there. Sweet pickles and American cheese were always to be found. Yes, I like all varieties of pickles, and I like American cheese too. I discovered the joy of eating them together.

But before I gross you out too much, I must share with you my first experience with pickling: Bread and Butter Pickles

Although sweet pickles are my favorite, bread and butter pickles run a close second. Their sweet and tangy crunch are pretty irresistible.

Carb Content Of Pickles

The keto diet severely limits your intake of fruits and certain vegetables that are high in carbs.

Notably, raw cucumbers are very low in carbs. In fact, 3/4 cup of sliced cucumbers contains only 2 grams of carbs. With 1 gram of fiber, this amount provides about 1 gram of net carbs .

Net carbs refer to the number of carbs in a serving of food that your body absorbs. Its calculated by subtracting a foods grams of fiber and sugar alcohols from its total carbs.

However, depending on the type of pickle and the brand, the pickling process can significantly increase the number of carbs in the end product particularly if sugar is added to the brine.

My husband is a huge fan of bread and butter pickles, but since they have sugar, we haven’t bought them since going keto. I decided that they were a great candidate for a quick pickle recipe, and I managed to get it just right. Tangy and not too sweet. Chris seemed pleased with the results, and the fact that we can easily make them again in the future.

How Are Bread And Butter Pickles Different From Regular Pickles

If youve never heard of bread and butter pickles before, you may be wondering how they differ from regular pickles.

As legend goes, the term bread and butter pickles originated in the Great Depression era. These sweet pickles were a cheap staple that were all that could be afforded by many as a result they would make sandwiches with bread, butter, and pickles.

As for how they actually differ from normal pickles, the main difference is in the ingredients used in the pickling process. Bread and butter pickles are made by pickling cucumber slices with items like sweet onion, celery seeds, and cilantro that give them a slightly sweet taste that meshes perfectly with their inherent tartness.

How To Make Bread And Butter Refrigerator Pickles

  • Prep your ingredients. Cut the Kirby cucumbers into thin slices. About ¼ cm to cm should be fine depending on how you like your pickles.
  • Cut the sweet onion into thin slices as well.
  • Remove excess moisture from the cucumber. Combine the cucumber slices and salt in a large bowl. The salt will help to draw moisture out.
  • Wait for about 90 minutes. Cover the cucumber and let it chill.
  • Rinse and drain. Rinse the cucumber slices under cold water and then drain well.
  • Combine the cucumber and onion. Toss together.
  • Prepare the brine mixture. Add the white vinegar, apple cider vinegar, and brown sugar to a saucepan. Bring to a simmer until the brown sugar has dissolved. Be sure not to use high heat or to leave it too long, otherwise it will burn.
  • Pack. Pack the cucumber and onion slices into a jar.
  • Pour. Pour the hot vinegar mixture over top of the cucumbers and then put the lid on the jar.
  • Refrigerate. Refrigerate the pickles for a minimum of 2 days before eating.

How To Make Bread And Butter Pickles:

Start with buying some pickling cucumbers. Theyre smaller than a salad cucumber. Your market should carry them, and in the summer months youll find them at farmers markets too.

Slice them up. Good, thick slices that will still allow the pickle to yield a crunch when you bite into it.

If you have one of these fancy doo-dads, you can make fancy pickles with ridges.

The pickles get a good dose of Kosher salt, then they can sit in the fridge for an hour. Then those pickles get rinsed off in the sink. Just rinse all of that salt off really well so that salty flavor wont follow the pickles into the pickling liquid.

Make the pickling liquid. Combine the sugar

with white vinegar,

and turmeric. Bring that all to a boil.

Meanwhile, add some sliced sweet onion to your sliced cucumbers.

Pour the hot pickling liquid over the cucumbers and onion.

Let it sit there at room temperature for an hour or so.

Move those cucumbers and onions to the cutest jar you have, and refrigerate them for 24 hours. This is when the magic process of pickling is going to happen.

If youre impatient like me, you wont wait 24 hours. I tried my Bread and Butter Pickles after just a few hours and they tasted perfectly pickled to me. So sweet and crunchy and incredibly tangy.
