I’d like to clear up this constant question get asked almost daily about whether coconut is a nut. While the US Food & drug Administration claims that coconut is a tree nut becomes it comes from a tree, it is in fact a FRUIT. People who have tree nut allergies may be allergic to coconut as well, but being allergic to coconut is not the same as having a tree nut allergy.
My own son was diagnosed with a Peanut and Tree Nut allergy at the age of 2. He has safely eaten coconut all these years without issue and he is now 14. Coconut is a fruit, called a drupe. It’s like a peach with a pit.
The American College of Allergy, Asthma and Immunology says it well: “Coconut is not a botanical nut: it is classified as a fruit, even though the FDA recognizes coconut as a tree nut. While allergic reactions to coconut have been documented, most people who are allergic to tree nuts can safely eat coconut. Cooking Method For Fathead Dough
The cooking method I have decided to go with is not a microwave. I could have never achieved the consistent result using a microwave.
Not that I dislike Microwave. We have it at home but use it seldom. But if the recipe calls for a microwave, I try it and make it there.

As far as the brand of almond flour I like to use, I like the Kirklands Blanched Almond Flour.
The reason I like Kirklands is because it’s MUCH cheaper than other brands, and it has the lowest amount of net carbs per serving. Every 28 grams of that almond flour has just 2 net carbs!

Can I Freeze This Keto Pizza Crust
I recommend freezing the baked pizza slices or pre-baked pizza base rather than freezing the raw almond flour pizza dough.
Also, make sure you freeze the slices or the pizza bases individually to prevent them from sticking together.
For pizza slices, bake frozen for 5-8 minutes at 350°F or until hot and crispy.
For the frozen pizza bases, I recommend you defrost them on the counter for 1 hour on a rack.
Then, prebake the base for 5 minutes to get the crisp bake. Finally, add your toppings and return to the oven until the cheese has melted.

Before we begin you might be asking, what is a fathead pizza crust? It is a replacement for the typical high carb pizza crust that uses a few simple low carb ingredients. What Is Fathead Pizza Dough
I’m not the first one to create this type of pizza but the original recipe, called Fat Head Pizza. The orginial fathead pizza dough was made using almond flour, cream cheese and mozzarella cheese, and it was genius!
But when you have a child with a nut allergy, making anything with almond flour is an issue so I use coconut flour and I think it works fabulously!
The first time I tried the original recipe with my adaptions to the nut flour, the pizza was too small for a family of 5.
I’m certainly not going to make a keto pizza dough all for myself, so I reinvented and worked on their recipe to make it work for us in our family. This way it is plenty big enough for everyone to have at least 2 pieces if they wished.
I’m just thrilled I can make a pizza for pizza night that my entire picky family will eat and it’s low carb and keto and absolutely delicious!

Make Sure The Dough Is The Right Consistency
Okay, so the dough in chicken crust pizza is not really dough. There is no flour not even low carb flour so its not exactly dough.
But whatever you want to call it, it needs the right consistency. The consistency can vary depending on how dry your chicken is, the size of your eggs, and even the Parmesan you use.

Roll Out The Pizza Crust

Since the dough is sticky you will need to use parchment paper to properly roll it out. I like to use two sheets of parchment paper that I grease with a light amount of non stick spray. This ensures the dough does not stick.
You can roll the crust to your desired thickness, but I recommend going relatively thin. The thinner you make your crust the crispier it will be. Leave a little bit more thickness towards the edges. This will allow the fathead pizza to be baked twice without burning the exterior crust that is not covered by toppings.
