ZERO CARB CRUST PIZZA! How to Make Keto Meat Lovers Pizza Recipe

I’d like to clear up this constant question get asked almost daily about whether coconut is a nut. While the US Food & drug Administration claims that coconut is a tree nut becomes it comes from a tree, it is in fact a FRUIT. People who have tree nut allergies may be allergic to coconut as well, but being allergic to coconut is not the same as having a tree nut allergy.

My own son was diagnosed with a Peanut and Tree Nut allergy at the age of 2. He has safely eaten coconut all these years without issue and he is now 14. Coconut is a fruit, called a drupe. It’s like a peach with a pit.

The American College of Allergy, Asthma and Immunology says it well: “Coconut is not a botanical nut: it is classified as a fruit, even though the FDA recognizes coconut as a tree nut. While allergic reactions to coconut have been documented, most people who are allergic to tree nuts can safely eat coconut. If you are allergic to tree nuts, talk to your allergist before adding coconut to your diet.”

Cooking Method For Fathead Dough

The cooking method I have decided to go with is not a microwave. I could have never achieved the consistent result using a microwave.

Not that I dislike Microwave. We have it at home but use it seldom. But if the recipe calls for a microwave, I try it and make it there.

The best way to make anything Fathead where mozzarella cheese melting is involved would be in a pot. Any pot or a pan which you heat above the stove. You can control it perfectly, and it works every time for me.

Follow my steps, and you will always have the perfectly pliable fathead dough you need.

So here’s what we’ll be using to make this keto pizza crust recipe:

  • Pinch of Salt, Garlic Powder, & Onion Powder

The Best Almond Flour To Use For Your Keto Pizza

Almond flour is by far my favorite low carb keto friendly flour substitute. And it’s actually what the base of today’s Keto Pizza Crust Recipe is made out of.

You can use it in so many different recipes and have amazing results. It mimics regular flour unbelievably well. So much so, that if you didn’t tell someone the base of this keto pizza recipe was made with almond flour, they probably wouldn’t know!

As far as the brand of almond flour I like to use, I like the Kirklands Blanched Almond Flour.

Fathead dough is pretty remarkable stuff. And its an absolute game changer for anyone who loves pizza. It has all the elasticity and stretchiness of real pizza dough, but with a fraction of the carbs.

I never would have come up with using mozzarella cheese as a base for keto pizza crust on my own. Ive made everything from keto garlic knots to spinach artichoke calzones. You can even make it sweet for recipes like keto cinnamon rolls.Of couse, one of the most oft-requested recipes for keto beginners is pizza. Its really just the ultimate American comfort food. And fathead dough has filled the void like no other.

Can I Freeze This Keto Pizza Crust

I recommend freezing the baked pizza slices or pre-baked pizza base rather than freezing the raw almond flour pizza dough.

Also, make sure you freeze the slices or the pizza bases individually to prevent them from sticking together.

For pizza slices, bake frozen for 5-8 minutes at 350°F or until hot and crispy.

For the frozen pizza bases, I recommend you defrost them on the counter for 1 hour on a rack.

Then, prebake the base for 5 minutes to get the crisp bake. Finally, add your toppings and return to the oven until the cheese has melted.

Fathead pizza dough is used in many keto recipes to replace high carb doughs. It is a versatile ingredient that you might want to get to know if you plan on sticking to a keto diet for a while.

Master Your Oven Time And Temperature

This Trick Makes the Easiest Keto Pizza Crust!

The step that separates the amateurs from the pros when it comes to fathead pizza crust is perfecting your oven time and temperature. You need to get to know your oven and figure out if it runs hot, cold, or just right.

The crust needs to be baked the first time at a relatively high temperature to achieve a good crisp. Go for 400 degrees Fahrenheit for about 10 minutes. Keep an eye on it and pull it out when it starts to brown. The crust will not get much more browned or crisped when you bake it the 2nd time with the toppings on it, so dont be afraid to leave it in as long as it takes to become crispy.

The only topping you really need to stay away from when topping your keto pizza crust is Pineapple. Other than pineapple just about every other pizza topping can be included on a ketogenic diet.

Some of these toppings may need to be cooked first, since the toppings are only on a fathead pizza for a few minutes while its in the oven. I would saute mushrooms, onions, and bell peppers prior to putting them on my fathead pizza crust.

What Is Fathead Pizza Dough

I’m not the first one to create this type of pizza but the original recipe, called Fat Head Pizza. The orginial fathead pizza dough was made using almond flour, cream cheese and mozzarella cheese, and it was genius!

But when you have a child with a nut allergy, making anything with almond flour is an issue so I use coconut flour and I think it works fabulously!

The first time I tried the original recipe with my adaptions to the nut flour, the pizza was too small for a family of 5.

I’m certainly not going to make a keto pizza dough all for myself, so I reinvented and worked on their recipe to make it work for us in our family. This way it is plenty big enough for everyone to have at least 2 pieces if they wished.

I’m just thrilled I can make a pizza for pizza night that my entire picky family will eat and it’s low carb and keto and absolutely delicious!

Can You Freeze Keto Pizza Dough

Yes! If you’re interested in making the fathead dough ahead of time and freezing it for later, I would recommend rolling out the prepared dough, then wrapping it tightly in cling wrap before storing it in the freezer.

When it’s time to make your pizza, bake the frozen dough in the oven for 5-10 minutes before topping it and finishing off the baking.

Make Sure The Dough Is The Right Consistency

Okay, so the dough in chicken crust pizza is not really dough. There is no flour not even low carb flour so its not exactly dough.

But whatever you want to call it, it needs the right consistency. The consistency can vary depending on how dry your chicken is, the size of your eggs, and even the Parmesan you use.

The mixture should be fairly dense and dry, but able to be pressed together. If the mixture is too dry, you can add more egg. If its too wet, add more Parmesan. Check the video below to get a better idea of how it should look.

What Is Chicken Crust Pizza

Keto chicken crust pizza is just what it sounds like a pizza where the crust is made out of chicken.

It seems a little strange if you havent heard of it before. How can those two things go together? Actually, they do.

So, what does chicken crust pizza taste like? Lets get this important fact out of the way. Surprise, it tastes like chicken!

Please, please dont expect this low carb chicken pizza crust to taste like a bread crust, because youll be disappointed! If you want a keto pizza crust that tastes like wheat pizza crust, stick with fathead pizza crust instead.

But if you love chicken as much as I do, and you enjoy the experience of eating pizza, then this keto chicken crust pizza recipe is for you! It makes a nice change of pace among other low carb pizza recipes.

And, one of the benefits of chicken pizza crust is that its super filling Id say even more filling than fathead pizza! Since its almost all protein and fat, a little goes a long way. Its also good for those trying to avoid or reduce low carb flours, which can sometimes cause a weight loss stall if used in excess.

Roll Out The Pizza Crust

Keto Chicken Pizza Crust

Since the dough is sticky you will need to use parchment paper to properly roll it out. I like to use two sheets of parchment paper that I grease with a light amount of non stick spray. This ensures the dough does not stick.

You can roll the crust to your desired thickness, but I recommend going relatively thin. The thinner you make your crust the crispier it will be. Leave a little bit more thickness towards the edges. This will allow the fathead pizza to be baked twice without burning the exterior crust that is not covered by toppings.

This is a large recipe so you have the option of make one family sized keto pizza or a handful of personal pizzas. We like making individual size keto pizza so each person can add their own toppings!
