How To Make Easy Keto Cookies
These keto cookies are made with just three ingredients. And the good news is that you probably already have all three in your kitchen: peanut butter, sweetener, and an egg.
To make these peanut butter cookies, first combine the peanut butter, sweetener and egg in a large mixing bowl. If your peanut butter is unsalted, you might like to add 1/2 teaspoon of salt to the mix. And, if you want an extra bit of flavor, feel free to add a dash of vanilla extract.
Then, stir the ingredients with a sturdy whisk or wooden spoon until they are smooth and well-combined. I like to mix all the ingredients by hand. But, if you prefer, you can use a stand mixer with a paddle attachment.
I like to portion the dough into 1-2 tablespoon size balls about 1 inch in size. Roll balls with your hands, and then place them on a prepared baking sheet.
With this dough, its important to flatten the cookies a bit so that they bake evenly. To flatten the cookies, use a fork to press a criss-cross pattern into each dough ball.
Bake them in the oven at 350° F for 10-12 minutes. Remove them from the oven and allow them to cool for two minutes. Then, transfer to a cooling rack to cool completely.

What Keto Sweetener To Use
Instead of using coconut sugar like I did in the other version, I used a blend of xylitol, erythritol and powdered stevia. Its the same blend of sweeteners Ive used in all my keto desserts.
Its pretty much the only blend of sweeteners that I like. Its basically a copy of Trim Healthy Mamas Gentle Sweet, so if you have that, you can definitely use it in place of the blend of sweeteners in my recipe.
I have tried them with Lakanto Golden, but I dont like the taste. But I think thats a personal preference. I dont like Lakante Golden in anything.
I love Powdered Lakanto in my Keto Pumpkin Cheesecake and Keto Cheesecake, and to be honest, I cant really understand why.
Maybe the cream cheese does something magical to get rid of the Lakanto aftertaste. Its a mystery!
How To Make Peanut Butter Cookies Crispier
If you want a crispier and crunchier keto peanut butter cookie then all you have to do is add in some chopped peanuts! Thats it!
Now that does mean we added an extra ingredient but come on, its now 4 ingredients instead of 3no big deal.
You also could cook them a little longer for some added crisp as well. Add about 2-3 extra minutes in the oven.
And to really ensure maximum crispiness let them completely cool before eating.

Also, the powdered sweetener will help make this dough less runny. Make sure you use powdered keto sugar as stated above.
